Place one tortilla per quesadilla on a platter, top with 1/4 of the spinach, red onion, roasted red peppers, black olives, mozzarella, feta, and oregano, then sprinkle with the remaining cheeses as desired. Add a few red pepper flakes as a garnish (if using).

For a few minutes, preheat a sizable non-stick skillet over medium heat. Add a second tortilla on top of the laden tortilla on the griddle. Sauté for a few minutes on each side, flipping after the bottom has become lightly browned.

Using a pizza cutter, remove the tortilla and cut it into wedges. When cooking multiple quesadillas at once, maintain them warm. Enjoy these with your favorite drink.
